Bugs and insects could simply refer to Bug types.
There are Crab pokemon in the world such as Crustle and Kingler.
There are Jellyfish pokemon like Tentacruel and Jellicent.
Not to mention one anon suggested that when the pokedex explains a pokemon as a member of xxx species it's just how we interpret it and that in the world of pokemon they actually aren't called that.

But what makes a Pokemon different from a dog?

A dog can bite, a dog can wag it's tail, a dog can tackle.

People keep Pokemon as pets, Sun/Moon is really hammering in real world animal evolution into the lore, and Pokemon basically live out every function an animal does.

What makes something a Pokemon, and what makes it an animal?

Pretty sure no Pokemon has ever spoken in the canon game series.

Just in spinoffs and the anime.

They don't even say their names in the game barring Pikachu. And that's just because Pikachu is special to the franchise. They make animal-esque noises in the games themselves.

It would entirely ruin the thematic atmosphere and context of the setting, so no.

They did it in the earlier animes and games mostly in part to fill in gaps, because of time constraints and because they didn't have as solid world building because they weren't confident in the IP yet.
This is all completely forgivable.

With each coming generation and new game we get less and less references to the real world and real world animals and more references to regions and pokemon.
