Here are 2 (3) examples of what shouldn't happen when a Pokémon evolves.
The Remoraid to Octillery evolution could be comparable to a Doedicurus Pokémon evolving into an Ankylosaurus only because they both can utilize their tail as sorts of a hammer. The only things connecting Remoraid and Octillery are their habitat and ability to launch stuff from their mouth.
On the other hand, Clamperl doesn't share even that much with it's evolutions.
I'm personally ok with evolutions like from Nidoran to Nidorino or from Axew to Fraxure as long as their final evolution is something different from the two first stages.
If I had to give an evolution line close to perfection, that would be Elekid, to Electabuzz, to Electivire. They share enough to make sense but they also get something new on every stage, for example from no tail to one tail and from one tail to two tails, while getting bigger and stronger along the way.

Not all evolution involves drastic change. Not to mention those kinds of drastic changes don't always make sense.

Nidorina being drastically different from Nidoran makes no sense. Pokemon with three stages tend to follow a child/adolescent/adult pattern. The difference from child to adolescent isn't always a big one. What's important is that it accurately bridges the first and last forms.

A Pokemon totally changing how it looks is what's awesome about Pokemon evolution, but there is also value in a set of forms that progress and mature naturally.

I honestly feel this is quite a forced meme based on hate for the first generations. People now expect evolutions to dramatically change and gain features just because. Since each generation tend to have fewer and fewer new Pokémon, they want everything to be completely different as in their head it increases the count of new concepts and designs. For me, it's fine when it's "essentially", but can get boring if "literally" (unless the base is pretty original and interesting)
