Competitively speaking, what are some good "jack of all trades" pokemon that can easily find their place in most teams and fulfill several roles?

Scizor is definitely a jack-of-all-trades
provides a ton of options and is an incredible pivot . you have a ton of options based on what your team needs, like defog, pursuit, u-turn and stuff like mega-evo swords dance if you need a sweeper.
Rotom-W as someone said is similar
He's just bulky and hard to counter, so he's really safe and good at filling gaps.
Those are the two that come off the top of my head, everything else is less JOAT-y, like Bisharp, Blissey, Forretress, Skarmory, D-nite, etc. (although most are a little dated)

All the Rotoms are fun, I love Trick-Specs or Trick-Scarf sets on them, usually Trick-Specs though.
Talonflame can be a revenge killer, setup sweeper, or stallbreaker. IT fits on many teams too.
Garchomp is fantastic offensively AND defensively.
Salamence, before it was banned in UU could fulfill many roles.

Calm Mind, Softboiler, Moonblast, Fire Blast. Some people replace Calm Mind or Fire Blast with Thunder wave, and that is just as obnoxious. And you should usually be doing Magic Guard with Leftovers unless you have a damn good reason to go Unaware.

A mega can, by definition, not easily fit on most teams, since it limits the team from having a different mega.

It's slow, pretty much all it does is Rapid Spin + 3 Attacks, and it pretty much has no reason to ever go physical. It's one of the most predictable megas in the book.

Most people prefer Fire Blast because it deals big damage to steels like Skarmory immediately but if you don't want to miss you can always go with Flamethrower.
Normal Rotom is underrated IMO, Ghost/Electric is a very cool typing.
