Well, honestly, when you consider what we've gotten in the past, it could go one of two ways.

Wingull to Pelipper
Starly to Staraptor
Pidove to Unfezant
Fletchling to Talonflame

Since Pikipek evolves twice, it would be unprecedented if it just became a bigger woodpecker. If it's like Pidgeot (sparrow/finch-eagle hybrid with bird of paradise headgear), it might be a mix of a woodpecker and another bird or two.

Pikipek can learn Bullet Seed, but that doesn't mean it will become Grass/Flying... especially when the starter is already that type combo.

It has quite long legs for its body, and considering the shape of the beak, it might evolve into some kind of stork

Steel/Flying definitely seems to be the most popular guess when it comes to its evolutions, and I have to agree considering the beak it has. From the looks of it (in the artwork as well as the gameplay) it can't even open, I wouldn't be surprised if it evolved into a bird with a beak made of metal. I'm a little hesitant to believe that we'd get a steel type pokemon straight out of route 1, but then again we got Talonflame out of route 1 as well so I guess anything is possible.
