To be completely honest, I think they kept Chansey and Blissey as Normal because they would be way too good as Fairy types.

I have no problem with the first two but Mr. Mime has always been the Pokemon most recognizable as "Psychic" to me. Alakazam bending spoons, Hypno swinging his pendulum and Mr. Mime putting up invisible barriers, they sum up Psychic pretty damn totally.
