Ditch IVs, keep EVs but make it a skill point system where you obtain points by defeating pokemon and you manually assign them, a rather common and basic method, but removes some of the tedium you might have with EVs.

IVs shouldn't determine hidden power. You can change hidden power by talking to some NPC or eat fagoto berries or whatever.

Basically instead of a pokemon giving speed EVs, or attack EVs, they'd just give generic EVs that you decide where to put them.

Remove them, and turn them into stat points.
You gain EV points by fighting pokemon.
You gain IV points from leveling.
Each pokemon would keep there born IV. But shit IV pokemon could get them from leveling.
Get a point or two per level.
If your pokemon is max IV then you can use the IV bonus you get from leveling for EV points.

No it doesn't.
Lets say you have 2 pikachus.
One with 31/31/31/31/31/31 That's 186
Now you get IV points per level.
So is pikachu is now 50. he has 100 bonus IV points. But since his IV points are maxed out. He puts those 100 points into EV points.
So this level 50 pikachu, (let's just say he leveled up with rare candies) has 100 EV points

Now the second pikachu
His IV is 10/10/10/10/10/10 60
At level 50 he has 100 EV points to spend
His IV points are now 20/20/27/31/31/31 (Depending on what points he put his IV into)
But 0 points in EV
When you reach your EV cap, you just don't get any more.
Do you get me now?
Grinding eggs would just be for nature/egg moves/balls

EVs are fine as they are now with how quick and easy horde battles make training them.

IV system shouldn't be removed (as it would sacrifice a part of non-competitive play) but they should instead make even more improvements to breeding. Give everyone a 6IV Ditto as a gift, make egg hatching even quicker and/or add a tool to hatch them instantly, and make it easier to get good IVs on legendaries.

Keep them because without them there is literally zero reason to trade since every Pokemon is basically the same. IVs are the closest thing we have to genetics in Pokemon and it gives each one a value.

Really the only reason to trade would be for eventmons, but this is a bad point since events are easier to obtain these days.

Basically IVs are the currency in trades. Obviously rarity and exclusiveness factor in, but you aren't going to get much for shit IV mons even if it is rare.
