Ki attacks have a lot more variety than strike so what happens to be the 'best super' is sort of situational and dependant on your playstyle- some are slower and require some setup (Riot Javelin, Perfect Shot), others can be just thrown out or used semi-evasively (Burst Kame, Feint Shot).

Ults themselves might be more stringent on 'tier rankings' but are still more 'up to you' unless it's Super Spirit Bomb, then it's far from viable unless your opponent is AFK or literally braindead.

The ki stat affects both supers and ults, whereas the strike stat does such for both supers and ults. There are notably less strike ults in the game than there are ki ults so it's not too shocking you haven't come across many.

It's effective but a bit of a dick move, to be honest. JC is a pretty bullshit Ult because it's one of the easiest to hit with, does half of it's damage before you even have a chance to vanish, and netcode makes vanishing at the correct point a crapshoot with less than 50% chance of success.

Just about any knockdown should do just fine if you're close enough to the ground, otherwise you can combo into your heavy break and land it from there.

Or, combo into it from something like Meteor Burst, Heat Dome Attack or Crusher Ball.

Also I wouldn't recommend Super Spirit Bomb, it's so slow even a heavy break can't gaurantee it since it leaves just enough time for them to just step vanish away if they want to do that, or hell, even WALK away if the connection is a little bad. If it does hit it does pretty reasonable damage and you can land other stuff while it's going as well, but that's a pretty big "if". Though it's totally fine for PvE, works great there.
I did have an idea for making it reliable to land, but that still needs testing and probably won't work anyway.

Uh, I think so. Usually at the end of a basic combo I think you can't backhit

After a vanish, you have the option of doing a normal step, or a step vanish. In a laggy environment, a step vanish would probably be slightly safer. Same for boosting. Boosting away works surprisingly well, unless you're fighting a male saiyan or buufu

The other route you can take, is to have a counter move equipped or to perfect block, so when they go for a backhit you catch them off guard
