Not long at all. There is about 70k MGP locked behind the Challenge Log for the Gold Saucer alone.

By just completing that you could accumulate 10k on the side easily and have it done within a day.

race to rank up your chocobo. get it to rank 40. buy a covering for a pedigree 2 chocobo. retire your rank 40 chocobo. breed with pedigree 2. receive pedigree 2 chocobo (this also has a cap of 40 but it will have better base stats and higher stat caps)
repeat until pedigree 9, which is the max
at this point you are still repeating this process until you have a chocobo that has 5 stars in every stat, which gives it the highest possible stat caps. you're not even done at that point, because chocobos operate much better in their "favored weather", which you want a specific kind (I'm talking an exact type of weather, no matter what) because that weather type is present in something like 75% of races so it's mathematically better to have it.
at that point you also want it to have good abilities.
