I am not and have never been "racist" by the definition of disliking people for the status of their race/culture, infact far from it, I long for the world to be divided into nations of people that preserve their culture, history, and traditions, but immigration between these nations eliminates this process and provokes unnecessary tension between the people groups. In 1917 Britain was 99% white, we didn't even have a word for the concept of race riot, that simply wasn't an issue for us. Now, 100 years on we have terrorist attacks, the infamous London riots in 2011, these things simply never existed before we artificially enforced diversity on ourselves.

You mention the NHS, and yes, migrant workers do help it a lot, there's no denying that, but the great pool of immigrants we bring in also use the NHS, meaning an additional burden is put onto it. If I were in power I would have simply given free degrees in medical matters and greatly encouraged our own people to take up the profession, rather than ship in third worlders to do the job for us. We had complete autarky under the imperial system and now we're told without immigrants we'd collapse, but the only reason we'd collapse is because of the sheer amount of immigrants we have here in the first place.

I really can't see the controversy in the statement that everyone should have their own nation, their own race, and their own people. M&T is really good, although it also adds a lot of time on the timeline and can't really run well at 5 speed, so it's a hell of a time investment. It adds things like communication distances, corruption modifiers, etc., which discourage large empires and force nations that want to be large empires to centralize and compromise in order to make it profitable. This is among many other changes like including modifiers based on the presence of certain buildings in your nation. So high numbers of universities will give you an education level modifier which reduces tech and idea cost as well as reducing the decay rate of army and navy attrition, for example, while many weapon manufacturies will reduce the cost (and therefore upkeep) of armies.

It's hard to summarize because it really is a total conversion in mechanical respects, but it's a great mod and it's worth it to play through. I wouldn't now, though, because a major update to M&T is about to come out which will change a lot of how it behaves anyway, and I also think it's worth it to play vanilla first just so you have the basics down before jumping into the mod. Even though it changes the majority of the way the game works, understanding the spirit of how it functions will help you get everything down.

And by that I mean that they are nowhere near the importance of naval power IRL. Portuguese Naus in the Indian Ocean struck fear into the heart of Dar al-Islam specifically because their cannons were unrivaled. Indians had no qualms about attacking Portuguese feitorias in the Malabar Coast, but it was only when the Portuguese bombarded Calicut for hours on end in retaliation that they recognised Portugal as a true military power. Zheng He's voyages in his titanic treasure ships had the specific goal of projecting Chinese influence in the Indies by showcasing their power and coaxing kingdoms to paying tribute in fear of what a fully mobilised Chinese fleet would look like. Naval power has been, from the Age of Exploration to this very day, the primary way to project power globally. It wasn't for nothing that the British 'ruled the waves' and were the foremost world power of the 19th century; their navy was all but unmatched.

What do galleys and carracks do? As far as I know, their only purpose is to fight other states' galleys and carracks to get a couple of victory points in wars. What about coastal bombardment? About 70% of what made tiny Portugal be able to capture Ormuz, Goa, Malindi and a bunch of other foreign coastal cities was their overwhelming firepower. The only thing close to this in EU4 are blockades, but do you seriously think that'd be enough to cause countries to actually consider fleets a threat? In EU4, if Ming decided to go the naval way and declared on, say, the Netherlands, and then proceeded to completely blockade Amsterdam with some 50 carracks, how much of a shit would the Dutch actually give? If that's all they did, the war would very soon result in white peace. But IRL, if the Chinese decided to go ham on their navy and fit their treasure ships with 30 Dardanelles Guns on either side, and then went and threatened Amsterdam, the city wouldn't survive half an hour of bombardment.
