Raw gameplay? Sacred Stones has it more polished but it's all too easy. I feel Hector Mode FE7 is the most balanced out of the 3. I feel large parts of Binding Blade are hard just because how bad most units you get are and how unpolished the game is with its weapons.

Chapter 7 is really the only hard chapter. Lategame is actually rather easy because you get insanely overpowered units with HM bonuses.
I wish it was consistently hard, but not quite CH7 hard. Complaining about units is often silly but if your archers weren't all terrible then maybe the wyvern riders in CH7 wouldn't be so overpowered.

To be honest, normal thracia turns into Leaf and his team of tanks plowing through everything once you figure out how to abuse it. Even in a LTC run you can get a couple units to cap all their stats, if you slow down and scroll abuse the game is a walk in the park.

Just remember not to hoard your weapons and staves, and not to hesitate to deploy your prepromotes. And don't worry too much about capturing. Most of the time when someone has difficult with FE5 it's because they've been tricked into handicapping themselves.

Out of curiosity though, what issue did you have with this chapter? I had armor slayer and it was fairly easy to dispatch of the top armors with the green-hared merc while the brigands ganged up while your myrm can easily solo the soldier reinforcements. If you take too long, some dark mages show up. But enemies in FE5 are really weak so the dark mages are just exp pinatas for your mages.

Even if you have lots of units, you don't need to do any fancy rescue chains or anything. You can just walk/warp in, kill the enemies, and walk out. You can even arm the units that were captured to get more troops if necessary.

That's strange. I'm pretty sure base level Dagda could slaughter the enemies in the corridors. The only thing to watch out for would be the long range tomes and warp staves. A good way to deal with the chapter would be to warp someone into the room with the mages and priests (e.g. pahn) and have them capture the priests' warp staves, and to silence/sleep/thief the boss and bishops in the center. Then you can walk around with little trouble.

The real kicker about BST is that armors are considered lower BST than they actually are, cavalry are considered higher than they actually are, and mages are considered higher than they actually are.

To put it in perspective what this results in:

The effective BST of Effie is only four points higher than the effective BST of Olwen.

This also means that the strong manketes (C!Tiki, Nowi, and Fae) and Donnel are now the best units for raising your score as a result.

So can we now all agree that Olwen and Reinhardt were mistakes?

I used him my first playthrough, never again. You can do just as good, if not better, by using Jill and/or Zihark. Nolan's pretty good too. And they aren't tied to story-based promotions unlike Sothe. He doesn't promote to third tier until the point where most, if not all, of your units should already be such.

Even with TA or SB the blue dragons can still get fucked up by Falchions.
A simple fury Moonbow Lucina can still survive both TA QR Ninian and Nowi and kill with the second hit. If she's +Atk then she can kill TA QR FCorrin as well.
SB blue dragons can kind of beat Falchion users but they're gonna be dropped to sub 10HP by it and could still lose depending on what IVs and buffs are in play.
