I'm not a fan of how washed out the colors are in RD compared to PoR but for the most part I'd say it varies from character to character. Some characters look worse but others look better. I think Jill looks hotter in RD than PoR.

I just beat the story missions and most of them were underwhelming, and apparently that's the bulk of this game's content aside from just doing Arena? Also the stamina system is annoying.

You must've both leveled up Klein a lot and had really lucky levels, because even at level 10 on average Klein doesn't hit 20 in strength and skill, and only nudges 16 in speed. Meanwhile Narcian has 20 str and 22 defense, off of the throne he stands a good chance against Klein, but on the throne as the boss of chapter 16 Klein stands almost no chance. Narcian is really not a jobber, especially not on the throne where you have to rely on a solid paladin or a Rutger/Deke support to stand against him.

What you're experiencing is typical mobage shit, at least in regards to the bland/quick gameplay and the stamina system.

It's a simple tactic really; they make the game just barely fun enough to enjoy it but make it over with quickly and lock you out of experiencing more of it unless you pay. They try to get you hooked onto it through small doses at a time, like a drug.

It's scummy as fuck but that's what mobage is like, especially F2P games.
