If you can export the save then it's likely you'll just need to hex-edit a portion that's different in each save file.
Make a blank save in both USA and EUR version and see how they differ. The "save region" in the files should look fairly similar.
Find where the "save region" exists on your actual EU save and then copy and paste it to the same place on the US version.

You can find them around cooking pots, usually. I think there might also be one behind the Kakariko Village lab.

I think you can also select it as a Sensor Target. I'm doing that with the Leaf and the Axe, and some of the better swords.

Have you met the accordion player yet? Bangin' tunes. Made me quite emotional at the time. Just kinda came across it while wandering the jungle, traced it to source just as my first blood moon rose.
I quickly found somewhere to make camp and then abandoned that soothing sound, entering into scary and unknown territory.

Can you even do the tilt based shrines with the pro-controller? I think I had the gamepad in hand at the time since I needed to charge my pro but normally I use the pro controller.

The third ending is probably something to do with the DLC. Also, is it true that you can freely run around in the field after beating Ganon? Most Zelda games end after the fight and you have to reset before the fight to keep playing but I heard this has an actual post game thing.

You know what you have to do, the hard part is the execution.
