No shit, killing off her emotions was her only defense for all those years in order to survive, its all she could do like Kohaku. Her awakening to her emotions and getting some small amount of hope again if what caused Angya to take hold in her body. It couldn't do anything when she was empty inside.

Then a lot of shit happened, a lot of pain, but throughout the course of HF she awoke to her emotions and self again, let out her anger and resentment, and became human again.

Hell, Shinji had Ayako beaten up in a back alley because she reprimanded him in front of some juniors. He just wants to feel in control and powerful in all relationships in his life and he's getting worse about it, this is what ruined him with Shirou. Yet Shirou doesn't care, he already sort of forgave him. When Shinji told him to go clean the dojo during the first day Shirou did it.

If Sakura was given to literally any other family things would have worked out great. Zouken would have lost sight of his dreams, and died a meaningless death within that generation. Kotomine, Gilgamesh, Sakura, Rin's issues, its all Tokiomi.

The movies do some things good. They spend a lot of time on Kens shit, and Makoto has more interaction with Akihiko/Shinji/Ken then none at all like the games, Ryoji and Makoto get a lot of screen time together.
