Tank accuracy cap is the highest since you will be in front of the boss as MT and even as OT will likely have moments in front too. You should be able to hit cap without melding by means of gear and food if necessary. How far off from cap are you?

Accuracy cap for tanks in creator is 699. If you can meet it with food, you don't have to meld it. You should meet it through just gear though. As long as you can at the very least hit accuracy cap with food, you should meld other things like crit/strength for accessories since you can't meld vit on anything that matters
