The Axe has the slowest speed, thus the best overall DPS when your damage comes from Slam and Mortal Strike. But really, plenty of peeps ignore the slight damage increase, and if you have Weapon Spec racial, then the other options are fine too.

Also my advice is always carry a stack of healing pots on you while warrior leveling. 90% of your deaths will be because your last hits on a mob are MISSPARRYMISSDODGEMISS, and it's cheaper to buy healthpots than pay for repair bills.

Contrary to popular belief, tanks only "need" defcap for very specific fights, and in BWL those fights are Nefarian and Chromaggus, and maybe Broodlord Lashlayer, depending on how is Mortal Strike works on this server.

This is because they have abilities that allow them to eat through both stacks of Shield Block before it is out of cooldown (or in Nefarian's case, force the tank into Berserker Stance where Shield Block isn't available). Sure, the bosses hit hard, but as long as Shield Block is up, the tank can't be either crit or crushed regardless of defense rating from gear, because it pushes both crits and crushes off the attack table for as long as it's up.

Can't speak for the actual tuning of the raids on this server though, I only speak from Nostalrius experience as an old MT.
