In order to get a full set of witcher gear upgraded to matercrafted level, I have to drop 3-4 k at the blacksmith every time, because "dimeritium plates" or "flawless rubies" basically never appear in the gameworld, so I either have to buy those parts from the blacksmith, or assemble them myself (at the blacksmith).

I think I've already spent some 15 k on my feline set, and I still don't have all parts upgraded. How is this fair? I'm at a point in the game where I'm supposed to be swimming in gold, yet this happens again and again.

Try doing some smuggle caches in Skellige, I found a bunch of dimeritium doing random question marks. You also find a bunch of useless gear in the process and you can sell it and get a lot of money.
