I think how it works is how much prana drained. For example, Shirou can't supply as much prana as Iri or Rin so Saber had to conserve and play things safe. I doubt Shirou was ever dying because Saber was draining too much prana. Kariya on the other hand had constantly struggled with Lancelot's prana consumption and eventually died because of it. It's only my head canon but I see Berserker Lancelot draining Kariya dry and without concern for his master's safety when a Saber Lancelot may hold back to avoid that happening.

Put any combination of Lancelot, Alter and Nobu in the back.

Emiya is decent but you'd need to focus on arts for him to shine and you don't have many servants that can help with that.
Going for a quick team would put Lancelot in the front instead of Arthoria, but that also reduces the diversity of your team (you likely won't see Lancelot's NP unless you try hard, too).

Put Tokiomi on Gil, L/OZ on either Drake or Arthoria and Bazett on the other. Replace Bazett with another buster-boosting CE or something better when you can (it's not really that bad though).
Extra Rin goes on whoever is in your 4th slot (or 5th if 4th is support).

You can put Lancelot in the front, if you want to play with stars and such (it's not like you need to to benefit from them, just that Lancelot's whole thing is about that). Though that would mean Arthoria in the back, most likely, as Drake and Gil generate a lot of stars compared to her.
Mashu has no cost and might save your ass with her one turn block and NP gain skill.
Aside from that, keep leveling them and you're set.
