If we're gonna talk Sans, then let's talk Sans and Alphys.
We know that they know each other, but Alphys is a bit antsy about it.
Gaster talks about two people, and Sans and Alphys are the only other scientists we know, and Toby said that "neither of them" could fix the machine in Sans' lab, so that was probably him and Alphys, too, unless it's referring to Gaster.
Sans and Alphys having a working relationship would explain why he knows about the Amalgamates, and why he doesn't just bail on Alphys in the ending where she becomes the leader like he does with Undyne's. Although, I kind of get the feeling they're pretty distant, since if she had Sans as a friend she wouldn't be so desperate to become yours, I think. Extrapolating, or, rather, going full on fan fiction here, that's probably related to the fact she's taken Gaster's place and couldn't help him fix his machine, or maybe just because he's lazy and doesn't really give a crap until it's too late in any timeline.

I actually didn't think of this, even though everything else you said has crossed my mind at one point or another.

When Toby said "neither of them", I believe he was either referring to Sans/Alphys OR Sans/Papyrus. Not Gaster, since the machine breaking/needing to be repaired occurred after Gaster was erased.

I postulate Papyrus there because he's actually a tiny bit more privy to things going on than people give him credit for and if him and Papyrus really "just appeared one day" like the Snowdin merchant really suggests, maybe they were both trying to go back to... wherever they came from. I'm not sure.

But it's probably Alphys.

This is actually a pretty interesting post. Both Sans and Alphys are depressed, but a lot of people think that it's from Sans's knowledge of the resets and Alphys's failures in soul preservation. But I think a big part of their depression is losing Gaster, since I'm assuming that the two of them both worked with him. The inability to fix the machine that could bring him back is probably a crushing blow to them, and maybe being around each other too much reminds the other of that, so that's probably why Sans doesn't hang out with Alphys much. It's also possible that Sans avoids her because her depression reminds him too much of himself.

One of the followers says that Alphys replaced Gaster, another talks about being wiped from existence and the world carrying on as if you had never existed at all. Gaster's entry being in the middle of Alphys' notes suggests that when Alphys replaced Gaster, she replaced him retroactively: Because Gaster doesn't exist, Alphys had to do the research and experiments Gaster had done again, by herself.
Maybe Entry #17 doesn't exist in the post-Gaster timeline because it's so specific to the whole DARK DARK DARK thing, which Alphys wasn't researching?

Okay, but imagine this: Sans comes to Alphys, looking for her help, but realizes that she can't remember. She tries to help him out, but they can't fix the machine, adding one more screwup to her laundy list of mistakes, while she watches Sans goes into a depression without knowing why and blaming herself for it until Papyrus pushes him back up. So let me get this straight:
Chara, who hated the world/humanity, tricked Asriel into absorbing his soul and going to the surface so he could kill everyone with the combination of a human soul and a monster soul. Asriel did that, but once he was on the surface putting Chara's body on a bed of flowers he was spotted by the humans, who thought he killed Chara and tried to kill him. In that moment the Chara soul within Asriel was telling him to kill the humans, but Asriel refused, retreating to the underground severely damaged.
Once he got there he died on the throne room and his ashes fell on the flowers. Later due to Alphys shenenigans his soul was reborn as flowey, who couldn't feel anything and eventually went to the ruins.
The question here is, how did Frisk obtain part of Chara's personality? I mean, Chara's soul was absorbed by Asriel and Chara's body was left on the surface. I can't see why the flowerbed at the beginning of the game would be any kind of grave if it had no real connection to Chara.

Then again, that begs the question of why only Sans would remember Gaster....it's clear that they definitely have some sort of connection, and it's driving me nuts that we probably won't ever get any real answers.

Personally, I'm in the camp that Gaster is Sans and Paps's father. Maybe Gaster was some sort of lesser boss monster, and when Sans was born/created, he gained a portion of Gaster's power, hence the eye thing and Gaster Blasters. Maybe this relation is why Sans is the only one that remembers Gaster.

At this point it's all just pure speculation honestly, even I'm aware of how farfetched this sounds.

Everything related to Gaster is dark, darker, yet darker.

As for Gaster, I think he's just some smart skeleton. Probably family with Sans and Pap, yeah, but still just a regular skeleton. As for how Sans got powers and awareness that he's gone, I think Sans might be injected with a bit of determination, not as much as Flowey, who got reset powers, but still enough to sort of break the rules a bit.
After all, skeletons don't have any pores, so when he's sweating while fighting you, he might just be starting to melt, just a bit.
