If you want a massive beautiful open world adventure with tons of lore, storytelling and world building get the Witcher 3.

If you want a tightly focused and difficult viceral action game with a H.P Lovecraft style world as well as minimal story get Bloodborne

Absolutely this. The Witcher expansions assumed that everyone and their mother used early version exploits to earn high levels and money. Those of us that honestly struggled in poverty were left scrambling when Blood and Wine was released. The Complete Edition balances out currency and eases up on being shorted for every side quest.

Novigrad has great quests but a lot of running back and forth.

Skellige island, after Novigrad, is like all of Skyrim within Witcher 3.

It's really much easier when you get used to it, you have the right gear, or use certain jutsu. FROM games are already just as much gear checks as Nioh is.
If you never use any set bonuses or invest in anything like boosting your living weapon, magic, or ninjitsu, then yeah. It will be hard. It's even easier if you have both since they use separate slot capacities.

also the game has very limited number of enemy types and every level you're almost always fighting the same shit. They all have pretty exploitable moves and are less aggressive than Bloodborne. If you stop dodging and fighting back in Bloodborne you are completely fucked.

You should try replaying it with shit like Quick-Change scroll, the paralysis gas bomb, or sloth talisman and see how much different the game is.

nah, in fact you might even find it easy if you're casual.
The main thing the game punishes is overthinking things and trying to take a defensive slow approach to the game. This is typically how you played Souls games. You analyze the attacks, dodge them or block with a shield, and punish the enemy. I didn't play Witcher 3, but from my understanding it is a pretty similar approach.

Bloodborne was intentionally designed to trip up players used to that. Majority of the enemies in the game can be staggered to death by mashing your attack.

Witcher 3 combat is just about using the right tactic for the right enemy, buffing with potions and oils and using magic at the right opprotunity.
Basically:
Human enemies try to surround you so dodging into another enemy's attack isn't that smart. Instead you want to parry, which is much easier then most games.
Monsters have claws so you can't parry them, instead you dodge or roll everything.

From PvE perspective, they are relatively simple but extremely punishing, as in the game can push your shit in even if you get the hang of your weapon. The more difficult nature of the combat shows up in PvP when you have to go against human enemies with different weapons and builds.
