I've tried about 5 times to get into it and never could. What am I doing wrong?

Avoid tough fights, kill low level creatures and save a lot. Gotta level up before you can fight well. Morrowind did the best job of making the starting character feel like an absolute beginner at everything.

How. I was replaying some weeks ago, went Long Blade, I rarely missed even at like Lvl 2 unless I was at really low stamina.
