The biggest bottleneck with GTA V on the 360 was the CPU. With CPU heavy scenes like quickly driving down a vehicle populated road with many physics objects on screen, or in firefights with many explosions and ragdoll/physics objects flying around the framerate would drop down to (and even below in some instances) 20fps.
The 360 had a tri-core (hyper threaded - so 6 threads) PPC CPU @3GHz.
The Switch has a quad-core ARM A57 CPU @1GHz.

as for GTAV on Switch, I'll buy it for a 3rd time but Nintendo really needs to make a SD card holder in game cases like the Game Cube and PS2 had for memory cards to help keep track of them.
