Just gonna go by the shit I have in my Steam library, here.
Kero Blaster does very nice low-detail pixel art.
Environmental Station Alpha does art that's INCREDIBLY lowres but looks great despite being so tiny.
Owlboy looks drop-dead gorgeous but isn't fun and has a shit, dissappointing story/ending. I would reccomend you just download screenshots to use as wallpapers as opposed to actually playing it.
Sonic Mania has pretty great pixel art.
Rivals of Aether looks fairly decent.
Aliens Go Home Run! looks fairly decent.
Monolith looks really nice and is basically The Binding of Isaac but not shit.
Creepy Castle emulates ZX spectrum fairly well, and looks fairly nice if that style isn't a turnoff to you.
VVVVVV mimics C64, and also looks fairly nice, if a little minimalistic.
Downwell looks really neat despite the 3-color limitation.
Shovel Knight looks pretty good.
Crypt of the Necrodancer looks pretty good.
Magic Wand probably doesn't count as pixel art, but it's enjoyable if you liked other stuff thecatamites did.

That's about all I've got, I think.
