Because while they love to talk shit on other people's ideas, and wax poetic on their other ideas, they've never made anything, and never will. They try to elevate their own perceived position by criticizing the works of others.

So when some pasty weeb actually does walk the walk instead of sitting around and fantasizing about it, it brings their flaws into sharp relief.
But not only does the game get made, but it's universally acclaimed, and sells millions.

In addition to all of this, because the game is fundamentally goodhearted, and not a cynical mess of bile like so many people here, it twists the knife they feel that much more, the ultimate retort of real honest sincerity to all the sarcastic shit flinging that hides behind presumptions of irony.
All this, and a significant portion of the board is edgy underage, who like all children are greatly frightened of being seen as weak or not adult. And because they are of course immature, a game about being nice that is popular with children literally cannot be good, and to espouse anything approaching endorsement constitutes the reveal of the fact that they are children.
Because of their distorted view of what it means to be an adult, they have to shit on anything that isn't edgy violent shit that massages their underdeveloped worldview.

I don't understand the appeal. Wasn't fun to play, the story wasn't anything special, takes forever to get going, doesn't look particularly good either. Gameplay just felt like it was there, wasn't fun to play.

And that's who I'm talking about. You're correct that it's not for everyone, these things being subjective. But again, OP is asking about a specific subset of people expressing a specific set of opinions.
I'll reiterate that while I think it was a great game, and any reasonable analysis would conclude it's at least good, tastes vary from person to person, and so there's room for individual preference.
But the people he and I are talking about aren't the "Wasn't my cup of tea" people, or even the "I really didn't enjoy the game" people, they're the swarms of crazy ass agitated people who think that some silly indie game is the tip of the spear lead by george soros and the international jewry to corrupt the hearts and minds of modern youth. You're trying too hard to sound deep and intelligent. I hate the game because the gameplay is very poor and I've never been one for sappy/emotional storylines in games 99% of the time.The RPG side of the gameplay is so lacking it basically doesn't exist, and almost every fight in the game boils down to just dodging a certain amount of turns, making the game feel like a shmup without the shooting part.
To claim I only dislike the game because I'm trying to be edgy shows you just can't understand people with a different opinion than yours and just try to judge them with a lazy excuse. I'm a huge sucker for overly cutesy and girly games and Undertale did not make me feel happy outside of a few brief moments during the early game, after that it just got too sappy and "You should really be feeling like this right now, please cry now!".

It's barely a "game" at all, as it has few fights and very little game play outside of just walking from place to place.

Also, the game tries too hard to mimic that quirky, Earthbound-like humor. Nothing kills comedy quicker than someone trying too hard, and this game is the very definition of "trying too hard."
