Gothic 2's quest design (and Gothic 1's aswell, I haven't played Gothic 3 yet though) is about offering you multiple choices without necessarily pointing them out to you. Think of the first quest in the game: get into the Harbor Town of Khorinis. An anon on here once called it a great "verticle slice of the game", and I am inclined to agree with you:

You arrive without proper clothes, so the guards won't let you into town. But by exploring the surroundings, you will discover several possibilities:
>you can work for the farmer for money to buy clothes from him
>you can sneak into the farmer's house and steal clothes from him
>you can make a deal with a nearby merchant who will get you into town, but you will owe him - you don't know what that means
>an old friend of yours tells you that the guards can be tricked into thinking you work for the local alchemist if you collect a lot of herbs

You can also sequence break into town by climbing over the wall, but that is also semi-intentional so I wouldn't count it as quest design. But this stuff sets you up for how to tackle the quests in the game: look for alternatives, ways around things, ways to trick people - this is basically exploration, not in a grographical way, but still exploration.

Anyway, this line seems kinda superficial:

The world is not just good for having "stuff to see". The world is good for having proper level design despite its openness. You will meet roadblocks, not in the form of a lock you need a key for, but in the form of stronger enemies that will incentivise you to go in different directions etc.

Really, Gothic 2 is fucking great, if I had one free wish for the gaming industry it would be that Piranha Bytes would still be as great as they were back then.

Yeah, you can also go there by sea, so what? And it's totally intentional anyway, Gothic games are 25% RPG, 25% Action games and 50% climbing simulators, the devs put countless easter eggs for pro climbers, especially in 2/NoTR.

It never happens once in any Gothic because you can simply outrun anything, especially in 2 and 3, and 1 doesn't really have any roadblock of that kind unless you purposedly go out of the main roads into forests, and even then unless you're against a Shadow Beast you can outrun anything, especially after you get acrobatics, which is piss easy to get.

I played Gothic 1-2-3 countless times and it's probably one of my favorite WRPGs franchises, even though the RPG side is pretty weak, but they're not as complex or well thought out as you want people to believe, if anything they're better much Witcher games that came years before Witcher games.
And yes, the worlds are good because there's a lot of things to see, and every little nook and cranny tells you a story in Gothic games, unlike most other open world RPGs.
