I've never played a turn-based RPG before (except for some Pokemon) and I want to start with a classic, what should I play?

I'd recommend any Shin Megami Tensei game, or the Spin off (Persona).
I can recommend plenty of turn based RPGs, just need to know your console of choice.
Final Fantasy IV, then work chronologically from there

Divinity: Original Sin. One of the most approachable and casual friendly games of the genre in recent history. Real good if you play with a friend.
Most people use the term "turn based" actually wrong. Action Time Combat which most Japanese RPG'S use is actually purely real time. It just involves a lot of cool downs.
If you want to play a proper turn-based RPG, you'll have to pick up something like Fallout 1/2, Divinity or Underrail. Those use an ACTUAL turn based system, in which time moves forward in proper discrete chunks.
