Cut as many corners as you can.
You're better off staying in mach 2 and cutting corners while grabbing rings until you reach the UFO.

First priority is always rings, focus on getting as many as possible and gathering blue spheres along the way. You should hit mach 2 around the start or part way through the 2nd lap. From there focus on trying to avoid going onto the slowdown parts of the track and as >>389218556 said try and cut as many corners. When you near the ufo is when you want to aim for mach 3 as a final burst.

Additional tip - At mach 3 to turn jump and turn yourself in the air its way sharper than just running and you can jump over gaps while doing so. You'll need this for the 6th stage especially.
