I agree, difficulty in RPGs should be dynamic, not selected at game start. If you want an easier game, don't go wandering into the dragon's lair of adventurer sodomy and instead opt for the fairy forest of love and friendship. You get the easier difficulty, and the story changes accordingly.

Difficulty settings were a mistake. Terrible for game balance and usually just turns everything into damage sponges with the exact same AI and enemy setup. Games should have a well balanced standard difficulty, and add something like optional permadeath or other actual difficulty options that affect something.
