Pac Man and Lode Runner were the first of their kind and inspired more evolved gameplay mechanics. The key word here is inspired because they are too gar removed grom how games are designed now.

Oot gave us many features that are so common they are easy to ignore. Having a contextual action button to make performing simple tasks made gameplay more intuitive, the targeting system solved the problem of depth perception and combat in 3D worlds, and if you go further back in the series you see that equipment link gets keeps the gameplay less repetitive by introducing new ways to interact with the world. The latter really broke many action games small scope they once had because of how quickly the gameplay lost it's appeal before games like Zelda.

The stories are remembered fondly because they are mythic in nature and are built on the same stories humans have been telling each other since we started keeping track. Thats not to say it's the best, but very few Zelda fans are enamored with the worlds or plots of the series.
