I've never played a Final Fantasy game and I want to get

the game boy advance versions of IV, V and VI are all pretty good starting points
the DS versions of III and IV are really difficult, especially for beginners so I'd recommend avoiding them for now
I and II are good, the GBA remake of them (or the PSP remakes, which are even better) is good although a lot of people hate II because it's a really flawed, dated game and I is good but the remakes tone down the difficulty to make it really easy

in my opinion all three playstation games are good but they're really divisive and there are people who hate each of them, I'd say to just play them in the order of release after you finish IV, V and VI
from X and onwards the games become even more different from each other than they were before and I'd recommend trying all of them if you're able to (except XI and XIV which are mmorpgs, but if that's your thing then give it a go)
most of the final fantasy games aren't very hard and are fairly simple to get into so really you could play any of them

Play them all in order you pleb.

If you want to understand the spirit of final fantasy, play VI or VII. Probably VII since being in 3d and having cinematics and a slightly more modern interface and stuff will make it easier for you.

There's no reason to go back and play a bunch of final fantasy games, read great novels instead. If you didn't play them in their time, VI and VII is enough.

10, 12, 13, and 15 are "avoid at all costs" territory. Everything below 9 and above 3 is good.

Final Fantasy VII

I would start with 7 since it is the most iconic and, lets be honest, the best final fantasy released to date. I would also definitely play 8, 9, 10. The good super retro final fantasies are 4, 5, and 6. 1 is decent but only really good if you are playing it to see the roots of ff. 12-15 are ok. avoid 2-3 like the plague.
