There's a ton of Pokemon who can break through all those defensive things on that team, the problem is Dugtrio has the ability to trap and kill most of those Pokemon, leaving you to die a slow, painful death at the hands of a bunch of unbreakable defensive walls.

I actually kinda like playing against stall, it feels really rewarding when you actually do manage to beat it.

It doesn't necessarily do either, and I think gamefreak actually chose the perfect time to add it in.
In a metagame like in generation 3 or 4 with not many obscenely strong threats with 2-3 counters, no team preview makes for a more strategic, slow paced game that revolves around hedging risk and controlling how much information you give/take.
The problem is that in newer gens, ESPECIALLY gen 6-7, there are always going to be at least 1-2 pokemon on the other team that are very close to an autowin against you. You absolutely need to be aware of needing to handle something like a charizard x or a volcarona or whatever, or else the game just becomes "lol u didn't guess my sweeper correctly gg" which is shit.

It's a shame a lot of competitive Pokémon features a lot of the same mons at the top. Especially in non-Smogon.

The meta is more anti-fun than ever, mostly thanks to the Tapus and Toxapex. Electric terrain prevents Rest, Toxapex has Haze, and generally they're so braindead easy to use even ELO hell can steamroll a Showderp team with their Tapu.
Baton Pass was also entirely banned from OU now, so no more balk fetus/boostan roostan/boosting Smeargle sets that enable shitmons to sweep.
It's miserable sometimes but I can still find fun there.

He can learn pretty much anything that can hit him which means instead of having to restrict yourself to what your mons can learn and how to play around that, you can build up your Smeargal and just have him learn the moves you want him to have. Generally this means lickety split, quick as shit smeargals with lock on, Sheer Cold, Dark Void and something else.
