Then you're probably going to be making your models in blender. There are tutorials online for making custom content for source, Google is your friend.
I'm still going to recommend mapping for a while, maybe making a full sourcemod with the stock assets.

Replacing them isn't too easy, and 3d modelling in general is a bitch.
But either way you are going to have to learn the ins and outs of the source engine, which in it's current version is a duct-taped-together beast all on it's own. I don't know how to poet custom models to it like you're asking, and I think it's doubtful there are any modders lurking, so as I said Google is your friend.
