There really are no obvious racial stereotypes anymore now that the player base is mostly "old" (late 20s+). These days you have a 2 sliding scales of "fun or insufferable" and "good at game or bad at game" where race choice really doesn't play a role. Elves still tend toward being MORE LIKELY to be insufferable, but that's about it.

I just use to play whatever fits the class.
If we go by your WoW example, in classic, I played a female night elf rogue since it fit perfectly from my point of view. I kept mostly playing female too since every single male model on the alliance side looked like shit, with the exception of dorfs. When I played horde years later at least I could finally go for male characters.

As a white male I choose to play white men in my fantasy games so I can live out the fantasy of murdering and destroying the lesser races. It's not a fantasy I can live in real life without severe repercussions, so being able to slaughter orc and troll nigs in my video games will have to suffice.

Video games are a male fantasy because it's a male dominated market. The vast majority of consumers of triple A style games are male, and so are the developers. Action movies appeal to the male fantasy for the same reason. The audience is generally male and so are the directors. Once in a while a movie like Kill Bill comes out with a badass female lead, but even then that movie appeals more to male fantasy. Same shit happens in music. Classic rock to rap music, a lot of the lyrics appeal to the male fantasy. What did you expect to happen when all of these industry's are driven by men? It isn't men's fault they outnumber women in the creative field, if more women want to create movies and music and video games then they can share their fantasies as well. If you want to appeal to female fantasy go read a romance novel.
