What are some games that are divided into clear sections, like days where you play one day at a time?
I want to play a game where I can divide the progress I make every time I play and keep it consistent

Youve got autism right?
Persona series 3-5. There are some story events that may make you jump some days though.

I've been considering getting Persona 5, but is it really enjoyable for someone who doesn't really like JRPG's?

I'm not a fan of most JRPGs, save maybe Pokemon and Final Fantasy. It's in my top 10 games, and Persona 4 Golden and Persona 3 FES are not far behind. A lot of the "JRPG" element can actually be done very sparsely, if you're playing right, and instead just mostly focus on the day to day activities. I guess I'll give it a go if I see P5 for a good price, I am kind of intrigued by it and its elements
End game wow, run dailies and seriously reconsider your life choices while doing it.
Sword and Sworcery is a decent adventure game, closer to a walking sim with good music since the combat is so lightly used/simplistic. Game is upfront about how long each section takes.
Postal 2 is great. Genuinely funny if a little dated, supports multiple playstyles. Split into 5 days, you're free to approach errands however the fuck you feel like. Apocalypse Weekend is just ok but Paradise Lost is great.
Darkwood looks great from what I've seen in streams.

I've seen Postal 2 gameplay, it looks fun. I'll also check out the other games you mentioned, thanks
Hearts of iron series. You just need 8+ years to finish one game
