Older Mario Kart games forced you to beat the lower difficulties to "100%" it, though in 8 you can just beat 150cc and you automatically get recognized for beating the lower ccs.

Pretty sure Devil May Cry 4 didn't give you achievements for skipping lower difficulties.

Getting S ranks is actually very hard on Easy since enemies die so quick.
