Is there anyway to change Pokemon's gameplay so it's still easy for kids to pick up but not boring as fuck?
rip off what Monster Hunter Stories did where the attacks itself follow a rock-paper-scissors priority on top of the monsters having their own base element/typing. The game is mediocre af but it is pretty much the best Pokemon clone

I think it would be cool if there was also a way to turn off the story completely or even artificial boundaries. Who cares if I want to go to the e4 with just a started? Let me get destroyed and learn that I need better pokes.

Pokemon's difficulty is already flexible enough that people who aren't children can create their own challenge.
Change the battle mode to Set, don't use any items in trainer battles, and turn of experience share/forbid yourself from any grinding. Those small rules don't change the core gameplay at all, yet changed Moon from something brainless into a game that had me utilizing status, buffs, and actual team composition.
A hard mode that caps levels against trainer battles, and prevents bag item use during trainer battles.
If your starter is level 50 but the trainer is only rated level 20, Pokemon higher than 20 will be set to 20 for that battle. the game already does this for multiplayer with cutting Pokemon down to level 50.
A very hard mode could lower the cap a little bit more, meaning you're forced to actually have a decent team composition.
