I'm putting together my first gaming PC this weekend. Any tips/things to watch out for?

Good, now that you know the parts you need you just need to actually choose them. Heading in the right direction OP. You'll get there someday.

Way overkill for someone who basically doesn't even know how much he's going to be into pc gaming.

Get a mid tower, drop the optical drive. Otherwise it looks fine.

I have a lower end PC now that I use, I just didn't build it.

You'd be better off with a high-speed m.2 ssd considering your motherboard allows it.

I'm in the exact same boat as OP. Being a third worlder I'm about to sink 5.5 grand into a major upgrade. How would anyone rate this? The 2 most expensive new parts I'm getting are an i7 6700k and pic related mobo. I plan on keeping my gtx 970 till later next year

you're gonna want a 10 meg pipe for sure

you really dont need a Full Tower, Full Towers are fucking huge and you only get them if you're trying to show off. Protip? No one cares how bif your tower is, Get a midtower. And if you're going overboard anyway, get a bluray player/burner
I don't know much about monitors but it SEEMS like you can get a better one for cheaper
Is an i7 7700k worth it if you do plenty of moderately CPU intensive stuff?

Most of the midtowers I say didn't have capability with most disc drives, and the plan is the use it as a media station too.
Take your time. If you can find a video explaining the process through a see-through computer, it helps making sure you're doing it right.
Don't overdose on the thermal paste or put too little on either.
Every cable you have is meant to fit somewhere, you're not missing anything.
