Bethesda's thing is to squeeze things for maximum vistas and playabilty. You can always see something, be it landmark, your destination, whatever. It's big, but not big enough so that it's still manageable to perfectly hand place everything.

If it tries to be realistic, 99.999% of the game would be boring empty planets, with maybe one or two interesting features, like a giant volcanic mountain, a miles high cliff wall or deep canyon, leaving only 0.001% of the game with anything interesting to find/look at.
If it doesn't try to be realistic, and every other planets has higher life on it, what's the point then? It's not true to actual space, and wouldn't have been easier to just make a game with a dozen or so planets that you can travel between? Then you can actually handcraft each world to make them feel real, instead of feeling like a bunch of randomly generated messes, and the other half being randomly generated empty areas.

I actually think it would be coolest to do a single moon. All the ships would be in orbit around the moon, and there would be actual handplaced bases across the surface at strategic positions built for fun gameplay.

And this also forces players to actually come together and play, instead of everyone fucking off to isolated corners of planets

This is one of those occasions where CIG can't win. They recently had a shitstorm over their hands because Chris said that, realistically speaking, they're probably only going to be able to fill out 6-10 systems how they want to fill them out by the time the game is in a state they would consider mechanically complete. The other 120-ish systems will have to come later because they don't want to just shit out 125 systems of empty rocks and say it's content
