The thing that makes me excited the most is how the weapons work now, they all look so smooth and satisfying and I like the little bits of added depth some of the weapons have now

So.. I've never played MH.

What's the draw? All I've seen thus far in every gameplay session is people fighting monsters (duh), but like, why do you have to fight them?

Is there a story you follow or what?

Each hunt actually does have a little story attached to it, there's a main quest line that's not in your face but exists and each hunt comes with a little info paragraph or two from the person who contracted you. So you do have a reason for each hunt.
But other than that it's for fun and for the thrill of it and for getting better equipment

MHW looks great but that's a fear that I have. How much of the development time was used for good graphics over gameplay? Will it still run well? Maybe I'm underestimating the power of ps4 but I hope the gameplay doesn't have any issues

It's running on the MT Framework that was used to make the Dragon's Dogma port, and that port ran on toasters just fine.

I think from what we've seen so far it will be good, I love the way the weapons feel now and other changes. G-rank is a toss-up though and that's the one thing I hate about the MH development team.
