anthropomorphic characters with clearly defined one note personalities are extremely popular with autists and social misfits in general
just look at mlp or five nights at freddy's or undertale
it helps that sonic is really easy to make "original characters" for because you just need to recolor existing art and/or put clothes on a character
plus, sonic games tend to be marketed to kids to begin with and they are usually pretty easy games with bright, flashy colors

OC the hedgehog being an early example of cringey fanart on the modern internet gave it that image. Sonic was very popular in the early 00s and deviantart made it easy for any random person to upload their poorly drawn fan work and get much more praise than was normal at that time in an enviroment that consisted mostly of weirdos, young adult artists, outsiders, perverts, and fans of geek culture in a community which provided one another with supportive feedback.
