I very highly suggest Raiden Fighters 2 and Raiden Fighters Jet. They're easy to find and quite fun.

Dragon Blaze and Gunbird 2 are also very fun, though Gunbird 2 is fairly easy, and Dragon Blaze can be brutally difficult.

I also recommend Cave's whole library, with DDP DoJ Black Label and Ibara being two very different style of shmup that are both excellent. Guwange is very interesting visually, which will keep your interest for a while, but it's not their best game mechanically.

James Town - Widescreen, good for beginners, 4P Co-Op
Jigoku Kisetsukan - free on Steam, Touhou clone

I'm not really into Ikaruga much either. I like the concept, but it just doesn't do it for me. Mushihimesama and Raiden 4 Overkill are excellent though. I wish they'd release more Raiden games on Steam, Raiden 2 is the first shmup I ever remember playing. There was a local Papa Ginos that had a machine there until 98-99'.

I don't know if it strictly a "bullet hell," I'm not too well-versed in the genre, but Astebreed is pretty cheap on Steam and is really fun.
