I mean roman Egypt was actually just Greek Egypt where Alexander the great's general took over a few centuries prior and was the last remnant of the old ways before the entire affair with cleopatra bringing the empire to an end and forcing Egypt into a more modern era.

From my basic understanding of history, the praise of mummification was still a common enough practice even around the time of the romans (who also had some of their people end up being buried Egyptian style, with the mummification and all), but wasn't the same as it used too be, for the most part the way the mummification practice was back in the golden age era were forgotten and what was left could be the equivalent of something that was cheaper, less sacred. Idk the exact details, something to do with how they emptied out the body's or no longer used certain rituals or prayers and even where bodies were buried, sometimes without proper coffins or just piled up in now forgotten catacombs that people have yet to discover to this day.

There was never a point in moving forward, Ubisoft only did that because it was a good way to introduce new gadgets and technology. It was never a rule that they had to go forward in time.

As for what's happening in the modern timeline, don't even bother. After AC Rogue, they basically gave up on the plot. Abstergo is trying to sequence a First Civilization genome to use the Animus on it, and that's about it. The modern story has been stagnating, and it fucking sucks because I really liked the new direction that Black Flag and Rogue had, with you being an Abstergo Entertainment employee.

Unity and Syndicate didn't even have any modern-day story, you just watched cutscenes of Shaun and Rebecca do missions in London.

Origins' setting and historical figures interest me, but the combat looks underwhelming and I'm not sure how I feel about a Destiny-like loot system in the game. I haven't played an ass creed since Black Flag, but this one seems to be passionately made and seems a good bit beefier than previous iterations. I can also respect Ubisoft for giving the franchise a year hiatus (which very well could have been a result of Origins requiring more time).
