Your question isn't specifically about the iron keep, but since you posted a picture of it I want clarify that the iron keep was just built on top of what seemed to be a normal mountain. It turned out that it was an inactive volcano, and the weight of the castle caused it to sink into the lava.

As for why someone would intentionally build a castle over lava, it's because you're a dragon turtle and you need something to burn to death in when you get your ass kicked by a plumber.

Take a look at their world, their fights were against giants and monstruous creatures, not people. Those beasts don't make plans about siege castles, they just atack with full power, and because of that, the lava lake is a great plan.
