Final Fantasy 1 and 3 are both still fun to this day. I think later entries are better but I can and have replayed those two games and enjoyed them just fine.
Personally I always make sure I play a series of games in release order so I can see how the games evolve, and it makes me appreciate every little addition more than if I just played the consensus "best" games. I feel like if I played Final Fantasy 7 first I wouldn't enjoy games like 5 as much despite 5 being a fantastic game that I like more than 7.
