So ganondorf gets born into a robe of all women which crowns him the defacto king of the gerudo. At some point or another king hyrule banishes the gerudo (because Vidya) to the desert. The now tribal king ganondorf has to figure out how to improve the living conditions of his tribe because they are forced to steal resource to be able to survive. He comes up with a hail Mary plan and stages a coup against the hyrulean government in the hopes of making things better for his people. He then decides that to only way to successfully storm and hold the Capitol is to seek out this sacred artifact and use it's power. Does it. Only gets a third, and because of the nature of the sacred realm he is changed into ganon. From that point forward megalomania consumes him.

Dorf is just an incredibly well executed classic villain. It's like the OoT developers took every villain trope they could think of, crammed it into one character and the resulting audacity is what made Ganondorf truly memorable. Just look at how ridiculously exaggerated his design is, for example. Everything about him stands in complete contrast to Link's appearance, and his inexplicably green skin makes him look like he doesn't even belong to any of Hyrule's races. His power and intelligence also serve to keep him in control of the plot all the way to the end, showing just how dangerous he is.
