After playingGrimoire, I'm interested in checking other old-school blobbers. Especially because while I enjoyedGrimoire, I found Grimrock and MMX pretty dull.

By the way, I'm looking for turn-based games, and I'd strongly prefer "modern" conveniences like fast-walking, an automap and the ability to place notes on it.

Sure. In rough order:
Wiz 6-8 trilogy. (6 has a mod for automap, 7 has it kind of inbuilt, 8 is 3d but really fucking good.) Don't play the snes 6 version, your save won't carry over.
Realms of Arkania trilogy ( has iso combat).
Might and Magic World of Xeen.
All generally considered the kings of the turn based blobbers.

If it's gotta be grid based movements, go with Might and Magic 3, 4 and 5 the latter two known as World of Xeen as they combine into one bigger game together. Cartography is in, but you have to learn the skill first.
If movement in a 3D world isn't an issue, then go for Wizardry 8 as well.

I had no idea they remade this game, but it looks like it's pretty ugly and buggy.
Does Lands of Lore still hope up? I remember it fondly, but it's been years since I played it. Can't even remember if it had an automap.
On that note, I don't even mind drawing a map in those dungeon crawlers, though what did piss me off is that you never knew where in the dungeon you'd start off, so if you guessed wrong, you'd either have to transfer to a new paper or tape another paper to the edge of the one where you ran out of space.
Eye of the Beholder 1 is excellent. A good variety of party compositions, simple story line, each dungeon level has a unique theme, tons of secrets and some moderately challenging puzzles. EOB 2 is even better, although 3 seems to be universally hated.
As others have mentioned, Wizardry 8 is the best of that series in my opinion (the banter between party members is incredible) and I personally love M&M 6-8.

Regarding manual mapping I'd suggest using a spreadsheet program. While it is nice to have physical maps I find the ease of a spreadsheet program to be too high to pass up. You can then also pass your maps onto someone else should the need arise.
Is there a decent app to help you draw maps while you're playing a vintage dungeon crawler? Something simple that lets me place a line for walls and maybe a few icons or a comment for each box of a grid? Same way as if I were drawing on paper?

Instead of the typical equip system you see in other games, each of your characters has 1 accessory slot and 3 magic stone slots. Magic stones can give you simple bonuses like increasing your max HP to more interesting ones like adding poison effect to your attack.
