Lost world type controls but have sonic gain momentum while using the run button, and have more open level design like the Zelda level.
Sonic Souls is pretty okay for a fangame, Sonic World is good too, so something like those games.

Speed is something everyone wants so make reward the player with speed when they meet specific actions
These actions would all be viable ways of obtaing more speed but are up to the player if they want to stick to one method or try to combine all the methods
These could include momentum from spin dashing, amount of rings held, and or how swiftly the player deals with enemies
What I mean by dealing with enemies is instead of the homing attack hitting an enemy, bouncing Sonic letting him pause to do another action, the homing attack would hit the enemy but will let Sonic immediately fall to the ground instead of going up into the air after hitting the enemy, this way you don't lose momentum from the speed you had already built up and allows you to keep moving at the speed you were at before you attacked enemies
If a new 3D Sonic game had to have a gimmick of some sort, I would give Sonic a "Foresight" abiltiy allowing him to see ahead what's to come so he would be able to react to it and get a second to think how to handle the situation, letting the player have the opportunity to be able to prevent them from slowing down, taking damage, or dying

Boost, totally 3d and linear (but with branching paths) along with a parkour system that actually works and levels that take advantage of the Z-axis it grants. Grephics tanked so a decent amount of long and intricate levels can be made.
