Literally unlock and start working on your movement and pattern reading. You have an entire arena where you can move and bait her attacks.

If you're good at dodging up close, then stand on her left side/behind and avoid her grab at all costs. Otherwise just run around the room and bait the spinning top attack.

Stop trying to rush so much? Boss is pretty easy. Stay close, roll into her, poke once or twice depending on weapon speed, rinse repeat.

Her tempo is different than other bosses and her wind ups are intentionally vague and misleading.
On top of that she has a very large moveset with lots of rare followups and surprise attacks she can just pull out of her perfect ass that you've never seen before, in the event that you're in just the right position at just the right distance

Use the pillars in the room to avoid her attacks when they get nasty. Constantly bait out attacks, unless she's doing that thing where she slowly walks around her (when she does that, pummel her and then run off).

It's a bit tricky to dodge her, but if you get that down just enough you'll beat her in a few tries. I've downed her with a +3 broadsword without too much trouble.

I still feel like it's supplemental, especially in invasions or pvp. You'll always have to have some melee capacity, but being able to make a few spells count (zapping someone as they heal, or tricking them with the homing soulmass spells by facing the other way, for example) can be all it takes to put a fight in your favor.

I am not a true soul player, I use a trainer to get the max souls possible and customize my character following a build. Get the biggest armor, Havels rings, a fast sword and get close.

Most Dark Souls bosses are about getting close and hit them, just like the opposite you will do if you panic like a little bitch. There is no variety at all between bosses.

tl;dr: have a fast weapon and get close, don't be a pussy
