If the monitors that gamers actually use (as in, 144hz panels that inherently are extremely low latency) had component/composite/s-video inputs that'd be ideal, but nobody makes anything of the sort.

It would look horrible.
Converting s-video/component to HDMI without a signal processor is always a bad idea.
If you don't care too much buy a cheap 720p LCD monitor, 20 dollar S-video/Component to HDMI and be happy.
