CV:PoR had a good desert level with a better late game mirror version. The red moon in the Forgotten City turning the sand red looked amazing but unfortunately you only saw it at the entrance. I also liked the desert area in Paper Mario and pic related was one of my favorite stages in UMK3.

Actually the most consistently awful level theme is "pitch-dark cave/sewers/whatever". Not being able to see where you go is just tedious.
