I tried it just now. Went offline mode, launched a game I haven't played in a long time, then went online again. The activity on my profile doesn't show that I've played this game in the past 2 weeks and the played time didn't go up. While I was offline it started tracking play time separately (started off from 0 again, showing 1 minute). Now that I'm online again it shows the same play time as before and didn't add anything to it.
